Instructions

  1. Steam the Onions
    Begin by bringing water to a boil in a steamer or a pot for steaming. Add the parsley stems, bay leaves, juniper berries, and peppercorns to the water for added flavor. Peel the onions and place them in the steamer, ensuring the onions are covered. Steam them for about 7-8 minutes, or until slightly softened. You can check by inserting a skewer into the center of the onions to ensure they are tender but not fully cooked.

  2. Prepare the Filling
    While the onions are steaming, prepare the vegetable filling. Peel and slice the potatoes into thin rounds. Clean and dice the champignon mushrooms into small cubes. Then, chop the zucchini, carrots, and any other desired vegetables into similar-sized pieces.

  3. Cook the Vegetables
    In a large pan, melt butter with a splash of extra virgin olive oil over medium heat. Add the diced potatoes and carrots, sautéing them until they start to soften. Then, add the zucchini and mushrooms, seasoning with salt and pepper to taste. Continue cooking until all vegetables are tender, and remove from heat. Stir in the fresh chopped parsley for added flavor.

  4. Prepare the Onions for Stuffing
    Once the onions are steamed and cool enough to handle, carefully slice them in half. Using a spoon, gently scoop out the centers, removing the core of the onion to create a hollow space for the filling.

  5. Assemble the Stuffed Onions
    Brush the hollow onion shells with melted butter for a glossy finish and to enhance the flavor. Fill the onions with the vegetable mixture, packing it tightly into the onion halves.

  6. Top with Grana Padano Cheese
    Sprinkle a generous amount of grated Grana Padano cheese on top of the filled onions. This cheese will melt during cooking, adding a savory richness to the dish.

  7. Bake and Serve
    Preheat your oven to 180°C (350°F). Place the stuffed onions on a baking sheet and bake them for about 20-25 minutes, or until the tops are golden brown and crispy. Once ready, remove them from the oven and serve them hot.
