Instructions:

  1. Prepare the Coffee Mousse:
    Start by making the coffee mousse. In a small saucepan, pour 250g of fresh cream and add the coffee beans. Gently heat the mixture, letting it simmer for about 10 minutes. Once done, remove from the heat and let it infuse for at least 1 hour to allow the coffee flavors to develop.

  2. Prepare the White Chocolate and Coffee Mixture:
    While the coffee is infusing, roughly chop the white chocolate into small pieces. After the infusion time has passed, reheat the cream and coffee mixture. Add the granulated sugar, stir until it dissolves, and pour the hot cream over the chopped white chocolate. Mix everything together until the chocolate is completely melted and the mixture is smooth. Let it cool.

  3. Make the Red Velvet Cake Batter:
    In a separate bowl, start by adding the eggs, one at a time, to the cooled cream and white chocolate mixture. Once the eggs are incorporated, add the remaining half of the sugar and mix well. Next, sift in the cocoa powder, and scrape the seeds from the vanilla bean pod, adding them to the mixture.

  4. Combine Dry Ingredients:
    Sift the all-purpose flour and baking soda together. Gradually add these dry ingredients to the wet ingredients, one tablespoon at a time, mixing continuously with a hand mixer until all the flour has been incorporated into a smooth batter.

  5. Add Yogurt and Salt:
    In a small bowl, combine the plain yogurt and salt. Use a spatula to mix them together until smooth and fully combined. Then, gently fold this yogurt mixture into the cake batter to give it a light, airy texture.

  6. Prepare the Heart-Shaped Cake Molds:
    Using a pastry brush, grease two heart-shaped molds (20 cm in size) with butter. Place the molds on a baking tray lined with parchment paper. Evenly divide the cake batter between the two molds, smoothing the top with a spatula.

    Spread a generous layer of the cooled coffee mousse onto one of the cakes. Place the second cake on top, pressing gently. Then, spread the remaining mousse around the edges and top of the cake.

  10. Chill the Cake:
    Before moving on to the decoration, refrigerate the cake for 5-6 hours (or freeze for 4 hours) to set the mousse and allow the flavors to meld.

    After the mousse has set, take the trimmings from the top of the cake and crumble them into small pieces. Use these crumbs to decorate the sides of the cake, pressing them gently to adhere to the mousse.
