Savory Pumpkin, Mushroom, and Grana Padano Tart

Chiodini Mushrooms 250g
Grana Padano DOP (grated) 100g

Instructions:

Step 1: Prepare the Pastry

  1. Begin by making the shortcrust pastry (pasta brisée). In a food processor, combine the cold butter and 00 flour with a pinch of salt.
  2. Pulse the mixture for 1-2 minutes until the ingredients come together into a crumbly texture.
  3. Transfer the dough onto a clean surface and gently knead it for a few moments until it forms a smooth ball. Wrap the dough in plastic wrap and let it rest in the refrigerator.

Step 2: Prepare the Filling

  1. While the dough rests, prepare the filling. Peel and dice the pumpkin into 2-3 cm cubes (you will need around 500g of pumpkin flesh).
  2. Clean the mushrooms and cut the larger ones in half. The chiodini mushrooms should be blanched in boiling water for a few minutes to soften before using them in the recipe.
  3. Slice the leeks into thin rounds.

Step 3: Cook the Filling

  1. Heat a drizzle of extra virgin olive oil in a large saucepan over medium heat.
  2. Add the sliced leeks and sauté until softened, about 3-4 minutes.
  3. Add the diced pumpkin and the prepared mushrooms to the pan. Season with salt, pepper, and a sprinkle of fresh thyme.
  4. Cook the mixture over low heat for about 15-20 minutes, stirring occasionally, until the pumpkin becomes tender and the mushrooms release their moisture.

Step 4: Assemble the Tart

  1. Once the dough has rested, roll it out on a floured surface into a circle large enough to line a tart pan (around 24 cm in diameter).
  2. Transfer the dough into the tart pan, pressing it gently against the sides to fit. Trim off any excess dough from the edges.
  3. Preheat the oven to 190°C (375°F), and ensure it is fully heated before baking.

Step 5: Combine and Bake

  1. Once the pumpkin and mushroom mixture is cooked, remove from the heat and stir in the grated Grana Padano DOP. Leave a little bit of cheese aside for garnishing later.
  2. Pour the filling into the prepared tart shell, spreading it evenly.
  3. Bake the tart in the preheated oven for 40-45 minutes, or until the crust is golden and the filling is bubbling.

Step 6: Serve

  1. Remove the tart from the oven and let it cool for a few minutes.
  2. Garnish with the reserved Grana Padano DOP and a sprinkle of thyme.
  3. Slice and serve warm, enjoying the deliciously creamy filling and the savory crust.
