Prepare the Crepes:
Begin by adding the flour to a bowl. Slowly whisk in the whole milk until the batter is smooth. Crack the eggs into the bowl and continue mixing until everything is fully incorporated. -
Cook the Crepes:
Heat a crepe pan (or a non-stick frying pan) over medium heat and lightly grease it with butter. Use a paper towel to evenly spread the butter across the surface. Pour a ladleful of the batter into the pan and swirl it around to cover the bottom evenly. Cook until the underside of the crepe turns golden, then flip it over to cook the other side. -
Assemble the Crepes:
Stack the cooked crepes on a plate. For each crepe, place a slice of ham and a few small pieces of brie cheese in the center. Fold the crepe in half to enclose the filling, then fold it again to form a half-moon shape. Repeat with the remaining crepes and fillings. -
Make the Sauce:
In a small saucepan, heat the fresh cream over low heat. Once warm, add in 30g of grated Parmigiano Reggiano and stir until the cheese has melted into the cream, creating a smooth sauce. -
Assemble and Finish:
Place the stuffed crespelle in a baking dish and pour the prepared cream sauce over the top. Sprinkle with the remaining 20g of Parmigiano Reggiano. Season with a pinch of black pepper and fresh parsley if desired. -
Serve:
