Instructions
Preparing the Rolled Meat:
- Start by preparing the filling for the rolled meat. Wash the mixed herbs and chop them finely. Set them aside.
- In a large mixing bowl, combine the ground beef, ground pork, chopped herbs, grated Parmigiano Reggiano, breadcrumbs, egg, minced garlic, oregano, thyme, marjoram, salt, and black pepper. Mix thoroughly with your hands to ensure all ingredients are evenly incorporated.
- Lay out a sheet of plastic wrap on a flat surface. Place the meat mixture on the wrap, and shape it into a rectangle approximately 23×26 cm in size.
- Spread the chopped herbs as an even layer over the meat.
- Carefully roll the meat using the plastic wrap, making sure to seal both ends tightly so the roll holds its shape.
- Once the roll is formed, place it on a baking tray lined with parchment paper. Brush the top with a little olive oil.
- Cook the roll in your oven (Samsung 3 oven) using the automatic cooking program A-12 (single cooking). Position the tray on the lower rack of the oven, and halfway through cooking, turn the roll as the oven signals. For a crispy exterior, switch to the upper rack during the last few minutes of cooking.
- Once cooked, let the roll cool slightly before slicing it into generous portions.
Preparing the Roasted Vegetables:
- While the meat is baking, prepare the vegetables. Wash and trim the broccoli, separating the florets from the main stalk and cutting them in half. Wash and trim the zucchini, then slice them lengthwise before cutting into wedges. Peel the carrots and cut them using the same method as the zucchini.
- Wash and peel the potatoes, cutting them into wedges to match the size of the other vegetables to ensure even cooking. Lastly, wash and cut the cherry tomatoes in half.
- Finely chop the rosemary, bay leaf, thyme, and sage, and set aside.
- Blanch the carrots and potatoes in boiling water for a few minutes until just tender, then drain and set aside.
- In a large baking tray, drizzle a bit of olive oil, add a garlic clove, and sprinkle salt and freshly ground black pepper. Layer the vegetables, then sprinkle with breadcrumbs.
- Roast the vegetables in your oven using the automatic program A-17 (roasted vegetables). After the cooking cycle finishes, move the tray to the upper rack, and turn on the grill function for a few minutes to achieve a golden, crispy finish on the vegetables.
- Once the vegetables are done, remove from the oven and set aside.
Serving:
Slice the rolled meat into thick slices and serve it alongside the roasted vegetable tray. The juicy, flavorful roll paired with the crisp, herby vegetables creates a mouthwatering, balanced meal thatโs sure to impress any guest.
