Fish Skewers in Worcestershire Sauce

Shrimp 8
Anchovies (or sardines) 130g
Worcestershire sauce 40ml
Wildflower honey 150g
Dry white wine 40g
Orange zest 1
Extra virgin olive oil 40g
Black pepper to taste

Cucumbers 2
Lemon 1
Rustic bread 2 slices
Fresh mint leaves 6
Worcestershire sauce (for panzanella) 1 tbsp
Extra virgin olive oil (for panzanella) 1 tbsp
Salt (for panzanella) to taste
Black pepper (for panzanella) to taste

Instructions

Prepare the Fish Skewers:

  1. Begin by preparing the anchovies. If preferred, you can wear gloves for these steps. Gently remove the head of each anchovy and open it along its spine. Remove the fins and carefully peel off the skin, then use a toothpick to remove the intestines. Set the anchovies aside.

  2. Next, take the tuna fillet and slice it into 8 thick pieces. Now you’re ready to assemble the skewers.

  3. Using wooden skewers, thread a piece of tuna and a shrimp onto each skewer, pushing them towards the end. Add another piece of tuna and a couple of anchovy fillets. Repeat this step with the remaining skewers and arrange them in a large baking dish or casserole.

Marinate the Skewers:

  1. In a bowl, combine the wildflower honey, Worcestershire sauce, extra virgin olive oil, orange zest, salt, and black pepper. Whisk everything together until well-blended.

  2. Pour this marinade over the skewers, making sure they are well-coated. Cover the dish with plastic wrap and let the skewers marinate in the fridge for at least 20 minutes.

Prepare the Panzanella:

  1. While the skewers are marinating, prepare the crispy panzanella to serve as a side dish. Cut the rustic bread into cubes.

  2. Heat a pan over medium heat and pour in the Worcestershire sauce and olive oil. Add the bread cubes and toast them, stirring occasionally until they turn golden brown. Set the toasted bread cubes aside.

  3. Peel the cucumber and slice it thinly. You can peel it lengthwise in some spots for a more rustic look.

  4. Take the lemon and carefully peel it, removing all the white pith. Slice the lemon into segments.

  5. In a large bowl, combine the cucumber slices, toasted bread cubes, lemon segments, and fresh mint leaves. Toss everything gently to combine. Your panzanella is ready!

Cook the Fish Skewers:

  1. Preheat a grill or griddle pan over high heat. Once hot, remove the skewers from the marinade and place them on the grill.

  2. Grill the skewers for about 3 minutes on one side, then flip them over and cook for another 3 minutes, or until the fish is cooked through and the shrimp is tender.

Serve:

  1. Serve the fish skewers hot off the grill, alongside the fresh panzanella.
