Spicy Hummus and Veggie Wraps

Carrots 150g
Zucchini 100g
Fresh chili pepper 10g
Iceberg lettuce 80g
Beetroot 50g
Emmental cheese 150g
Cooked chickpeas 300g
Fresh parsley 20g
Fine salt to taste
Black pepper to taste
Tabasco® sauce 1 tsp
Lemon juice 30g
Garlic 1 clove
Spicy paprika 1 tsp
Tahini 50g
Extra virgin olive oil 50g
Water 50g

Instructions:

  1. Prepare the Spicy Hummus: Start by making the hummus. In a blender or food processor, combine the cooked chickpeas, tahini, fresh parsley, and a pinch of salt. Squeeze the juice of a lemon and add it to the mixture, followed by a few drops of Tabasco® and a clove of crushed garlic. Blend everything until smooth, and while blending, slowly pour in the olive oil through the opening. Once it’s well-mixed, add water to adjust the texture. Blend again until the hummus reaches your desired consistency. Place the hummus in the refrigerator to chill while you prepare the veggies.

  2. Prepare the Vegetables: Using a mandoline, thinly slice the carrots. Cut the carrot slices into matchstick-shaped strips. Do the same with the zucchini: after washing and trimming the ends, slice them into rounds. Slice the fresh chili pepper, removing the seeds if you prefer less heat. Cut the iceberg lettuce in half, remove the core, wash, and dry it thoroughly using paper towels. Peel the beetroot, cut it in half, and slice each half thinly with the mandoline.

  3. Assemble the Wraps: Take a whole wheat flatbread (piadina) and place two slices of Emmental cheese on it. Add a generous spoonful of the spicy hummus. Then, layer on the prepared vegetables—carrot strips, zucchini slices, chili, and beetroot. Fold the sides of the flatbread inward, then roll it up from the bottom, creating a tight wrap.

  4. Grill the Wraps: Heat a griddle or a pan over medium-high heat. Once hot, place each wrap on the griddle and cook for 1-2 minutes on each side, until the flatbread is golden brown and crispy.

  5. Serve: Once grilled, remove the wraps from the griddle and place them on a cutting board. Slice each wrap in half to serve. These spicy hummus and veggie wraps make a perfect healthy and satisfying meal for lunch or dinner.
