Instructions
Step 1: Prepare the pistachio crumble.
In a bowl, combine crushed pistachios with breadcrumbs. In a small skillet, heat some extra virgin olive oil over medium heat. Add the breadcrumbs and pistachios to the pan, and lightly salt. Stir until golden and crispy, then set aside.
Step 2: Sauté the tomatoes and seasonings.
Wash the cherry tomatoes and cut them in half lengthwise. In a large pan, heat olive oil over medium heat with one crushed garlic clove and half a fresh chili pepper. Add the Taggiasca olives and cook for about a minute, allowing the flavors to infuse. Once the garlic and chili have softened, remove them from the pan.
Step 3: Cook the tomatoes.
Add the halved yellow cherry tomatoes to the pan. Allow them to cook gently over low heat for about 15 minutes, covered with a lid, until the tomatoes soften and release their juices.
