Bruschetta with Burrata and Vegetables

Ingredients:

Burrata 350g
Extra virgin olive oil 20g

Fava beans 450g
Carrots 125g
Radishes 100g
Lamb’s lettuce (Songino) 15g
Fresh mint leaves 8 leaves
Extra virgin olive oil (for dressing) 50g
Salt (fine) to taste
Black pepper to taste

Instructions:

  1. Prepare the Toasted Bread
    Begin by slicing the bread into 2-3 cm thick slices. Arrange the slices on a baking tray lined with parchment paper. Drizzle them with a bit of extra virgin olive oil, and season with salt and black pepper.
    Toast the bread in a preheated oven at 240°C (464°F) with the grill function on for 3-4 minutes, or until the slices are golden and crispy. Once done, remove from the oven and set aside to cool.

  2. Prepare the Vegetables
    For the fava beans, open the pods and place the seeds in a bowl. Cut a small incision on the top of each fava bean and gently remove the outer skin.
    Wash the carrots thoroughly, cut off the ends, and peel them using a vegetable peeler. Grate the carrots finely, and then slice them into very thin rounds.
    Wash and thinly slice the radishes.

  3. Make the Dressing
    In a tall, narrow glass, pour the 50g of extra virgin olive oil. Add the fresh mint leaves (7-8 leaves), ensuring they’re clean and dry. Season the oil with salt and pepper, then stir gently to combine the flavors. This infused oil will add a fragrant, herbal touch to the vegetables.

  4. Assemble the Bruschetta
    Once all components are prepared, it’s time to assemble your bruschetta. Take each slice of toasted bread and top it with a generous spoonful of burrata cheese.
    Layer with the grated carrots, sliced radishes, and fresh fava beans. Drizzle with the mint-infused olive oil dressing, ensuring all vegetables are coated in the aromatic oil.
