Water 600 g
Dry yeast 7 g
Extra virgin olive oil 60 g
Fine salt 20 g
Williams pears 400 g
Brie cheese 200 g
Mozzarella cheese 250 g
Parmigiano Reggiano DOP 30 g

Instructions:

  1. Prepare the dough:
    Start by placing the flour into the bowl of a stand mixer. Add the dry yeast and begin mixing gently. Gradually pour in the water, ensuring that each addition is absorbed by the flour before adding more. Once all the water is incorporated, slowly add the olive oil, similarly letting the dough absorb it completely before continuing.

  2. Knead and let rise:
    Once the dough comes together, remove it from the mixer and form it into a ball with your hands. Cover it with plastic wrap or a clean kitchen towel and set it to rise in the oven with the light on (or in a warm place) for about 1 to 2 hours, or until it has doubled in size.

  3. Divide and shape the dough:
    After the dough has risen, transfer it to a floured surface and divide it into 4 equal portions. Roll each portion into a ball. Then, flatten each ball starting from the center and gently stretching the edges, creating a round pizza shape. If necessary, stretch the edges slightly with your hands.

  4. Preheat the oven:
    Preheat your oven to 250°C (482°F), or as high as it will go, ensuring it is well-heated for a crispy pizza crust.

  5. Prepare the toppings:
    While the dough rises and the oven preheats, prepare the toppings. Slice the Brie cheese into pieces about 5mm thick, then cut each slice into small squares, approximately 2.5 cm per side. Grate the mozzarella cheese and set it aside. Thinly slice the pears, removing the cores, ensuring each slice is of an even thickness.

  6. Assemble the pizza:
    Once the dough is ready and the oven is hot, lightly oil each pizza base with a drizzle of extra virgin olive oil. Begin layering the toppings: first, scatter the mozzarella cheese evenly over the surface, followed by the Brie squares. Finally, sprinkle with freshly grated Parmigiano Reggiano for an extra touch of richness.

  7. Bake the pizza:
    Carefully transfer the pizzas to the preheated oven and bake for 8-10 minutes, or until the crust is golden and the cheese is bubbling and melted.

  8. Final touches:
    Once the pizzas are out of the oven, top them with the sliced pears, arranged neatly for visual appeal and balanced flavor. Allow the pizzas to cool slightly before slicing into quarters and serving.

  9. Serve and enjoy:
    Serve the Pear and Brie pizza warm, with a drizzle of olive oil if desired. This pizza combines the richness of Brie, the creaminess of mozzarella, and the sweetness of fresh pears, creating an unforgettable flavor experience.
