Ingredients:
| Ingredient | Quantity |
|---|---|
| Red onions | 500g |
| Breadcrumbs | 50g |
| Black olives | 40g |
| Capers | 15g |
| Cherry tomatoes | 200g |
| White wine vinegar | 15ml |
| Parmesan Reggiano DOP | 30g |
| Extra virgin olive oil | To taste |
| Salt | To taste |
| Black pepper | To taste |
| Fresh parsley | To taste |
Instructions:
-
Prepare the onions: Begin by peeling the red onions, removing just the outer layer and any root ends. Rinse them under cold water to remove any remaining skin or dirt.
-
Blanch the onions: Bring a pot of water to a boil and add a tablespoon of white wine vinegar. Once boiling, add the onions and let them cook for about 10 minutes until slightly softened.
-
Prep the tomatoes: While the onions are boiling, wash and dry the cherry tomatoes. Cut them into wedges and set aside.
-
Drain and cool the onions: Once the onions are done, drain them and set aside to cool slightly. When they are cool enough to handle, slice them into wedges.
-
Assemble the dish: Preheat your oven to 180°C (350°F) with the static heat setting. In a baking dish, spread a layer of breadcrumbs and grated Parmesan, followed by a drizzle of extra virgin olive oil.
-
Layer the onions and toppings: Arrange the onion wedges in the dish. Add the cherry tomato wedges, capers, and black olives on top. Season with salt and black pepper to taste.
-
Bake: Place the dish in the preheated oven and bake for about 20 minutes. After 20 minutes, switch to the grill setting for an additional 5 minutes to get a golden, crispy top.
-
Final touch: Once done, remove from the oven and sprinkle with freshly chopped parsley before serving.
