Instructions
To prepare the Beer Can Chicken, begin by making the seasoning rub. Start by placing the brown sugar into a mortar and use the pestle to grind it into a fine powder. Once finely ground, add the sweet paprika and continue grinding. Then, add a pinch of oregano, followed by salt, and continue to grind until the mixture is completely fine and uniform in texture.
Next, melt the butter and use a brush to lightly coat the entire surface of the chicken with it. Then, generously rub the seasoning mix (the rub) onto every inch of the chicken, both inside and out. Make sure to massage the rub well into the meat so that all the flavors penetrate the fibers of the chicken. Once thoroughly coated, wrap the chicken in plastic wrap and refrigerate for at least two hours, allowing the flavors to meld.
While the chicken is marinating, prepare the injection. In a separate bowl, combine the beef broth with Worcestershire sauce and allow the mixture to cool. Once cooled, fill a meat syringe with the broth mixture and carefully inject it into the chicken’s muscle. You’ll want to insert the syringe, slowly withdrawing it as you inject the liquid to ensure an even distribution. As you inject, the meat will puff up, indicating that the liquid is being properly absorbed. Keep in mind that while much of the liquid will be lost during cooking, this method will leave you with an incredibly moist and juicy chicken.
Next, pour the beer into the cavity of a special beer can chicken rack (or into a tall, open can). Place a sprig of rosemary into the beer for added flavor. Carefully position the seasoned chicken onto the rack so that it stands upright with the beer can inside it. The beer will help keep the chicken moist during roasting.
Roast the chicken in a preheated oven at 180°C (350°F) for about 50 minutes. Once the chicken has reached a golden, crispy exterior, carefully remove it from the oven.
For the side dish, while the chicken is roasting, prepare the potatoes. Slice them into wedges and wrap them in foil. Roast the potatoes in the oven alongside the chicken for a perfect side of crispy and tender potato wedges.
Once done, allow the chicken to rest for a few minutes before serving. Serve your Beer Can Chicken hot, accompanied by golden, crispy roasted potatoes.
