- Begin by cracking the cardamom pods in half. Brew your coffee in a moka pot and, just before the temperature reaches 121°C (about 115°C), add the cardamom to the coffee. Allow the coffee to finish brewing, ensuring the flavors of the cardamom infuse into the coffee.

Make the Sugar Syrup:
- In a small saucepan, combine the water and sugar. Heat the mixture over low heat, stirring until the sugar dissolves completely. Once the syrup reaches 121°C, remove it from the heat.

Whisk the Egg Yolks:
- Gradually pour the hot syrup over the egg yolks while whisking vigorously with an electric mixer. Continue to whisk until the mixture cools completely and becomes light and fluffy.

Combine the Mascarpone Mixture:
- In a separate bowl, lightly soften the mascarpone cheese with a spatula. Gradually add the cooled egg yolk mixture to the mascarpone, stirring gently with a spatula using an upward motion. Mix until the cream is smooth and homogeneous.

- Strain the coffee mixture through a fine sieve to remove any cardamom residue. Transfer the mascarpone mixture into a piping bag for easy assembly.

- Break the ladyfingers into smaller pieces and dip them into the coffee to soak briefly. Arrange the soaked ladyfingers in the glasses, pressing gently to fit them in place.
