Instructions:

  1. Prepare the Cardamom-Infused Coffee:

    • Begin by cracking the cardamom pods in half. Brew your coffee in a moka pot and, just before the temperature reaches 121°C (about 115°C), add the cardamom to the coffee. Allow the coffee to finish brewing, ensuring the flavors of the cardamom infuse into the coffee.
  2. Make the Sugar Syrup:

    • In a small saucepan, combine the water and sugar. Heat the mixture over low heat, stirring until the sugar dissolves completely. Once the syrup reaches 121°C, remove it from the heat.
  3. Whisk the Egg Yolks:

    • Gradually pour the hot syrup over the egg yolks while whisking vigorously with an electric mixer. Continue to whisk until the mixture cools completely and becomes light and fluffy.
  4. Combine the Mascarpone Mixture:

    • In a separate bowl, lightly soften the mascarpone cheese with a spatula. Gradually add the cooled egg yolk mixture to the mascarpone, stirring gently with a spatula using an upward motion. Mix until the cream is smooth and homogeneous.
  5. Assemble the Tiramisu:

    • Strain the coffee mixture through a fine sieve to remove any cardamom residue. Transfer the mascarpone mixture into a piping bag for easy assembly.
    • Pipe a layer of the mascarpone cream into the bottom of each glass, creating the first layer. Dust the surface lightly with cocoa powder for a subtle cocoa flavor.
    • Break the ladyfingers into smaller pieces and dip them into the coffee to soak briefly. Arrange the soaked ladyfingers in the glasses, pressing gently to fit them in place.
  6. Layer and Decorate:

    • Add another layer of mascarpone cream on top of the soaked ladyfingers and smooth it out to create an even surface.
    • For decoration, place a piece of parchment paper over each glass, creating a clear division between the top and bottom sections. Dust the uncovered part of the dessert with more cocoa powder.
    • Garnish the other half with pistachio crumbs to add texture and flavor.
  7. Serve and Enjoy:

    • Allow the Cardamom Tiramisu to rest in the fridge for at least 2 hours before serving to allow the flavors to meld. Once chilled, your Cardamom Tiramisu is ready to be enjoyed!
