Prepare the anchovy sauce:
In a large pan, heat 40g of extra virgin olive oil over medium heat. Add the anchovies in oil, and sautรฉ them for about 2 minutes, allowing them to break down and infuse the oil with flavor. Add the garlic cloves, crushed slightly, and cook until fragrant. -
Toast the breadcrumbs:
While the anchovies are cooking, place a pan over medium heat and add the breadcrumbs, a pinch of salt, and 1 tablespoon of olive oil. Stir constantly to ensure they donโt burn, and let them toast for about 5 minutes until they become golden and crispy. For an extra crunch, roughly chop the almonds and add them to the breadcrumbs as they toast. -
Prepare the pasta:
