  1. Cook the Pasta
    Begin by bringing a large pot of salted water to a boil. Once boiling, add the fettuccine and cook according to the instructions on the package until al dente. Be sure to save a ladle of pasta water before draining the pasta.

  2. Prepare the Basil
    While the pasta cooks, wash and dry the basil leaves. Using a knife, roughly chop the basil into small pieces, releasing its aromatic oils.

  3. Toast the Almonds
    In a large pan, heat the sliced almonds over medium heat. Toast them for a few minutes, stirring frequently, until they become golden brown and aromatic. Keep a close eye to prevent them from burning. Remove from heat once done.

  4. Prepare the Ricotta Sauce
    In a separate saucepan, add the ricotta cheese. Stir in a ladle of the pasta cooking water to create a creamy, smooth sauce. Gently heat over low heat, stirring occasionally.

  5. Combine Pasta and Sauce
    Once the pasta is cooked and drained, transfer it directly into the saucepan with the ricotta sauce. Mix well to coat the pasta evenly with the creamy ricotta, adding more pasta water as needed to achieve your desired sauce consistency.

  6. Finish the Dish
    Stir in the freshly chopped basil and a drizzle of extra virgin olive oil for added flavor. Sprinkle the majority of the toasted almond flakes over the pasta, stirring to combine.

  7. Serve
