Fried Pecorino with Fava Bean Cream

Instructions:

To create the Pecorino Fritto con Crema di Fave, start by preparing the creamy fava bean sauce.

  1. Blanch the Fava Beans: Begin by blanching the fava beans in boiling salted water for a few minutes until tender. Drain and peel off the outer skins of the beans.

  2. Prepare the Cream: Once the beans are peeled, place them in a blender or food processor. Add the olive oil, a squeeze of fresh lemon juice, salt, and freshly ground black pepper. Toss in the garlic clove, peeled and chopped, for added flavor.

  3. Blend: Blend the mixture until smooth and creamy. If the cream appears too thick, gradually add a little water until you achieve the desired consistency. Once ready, transfer the cream into a jar or bowl and set aside.

  4. Prepare the Pecorino: Slice the Pecorino Romano cheese into thin slices.

  5. Coating the Cheese: In one bowl, beat the egg. In another, pour some rice flour. Dip each slice of Pecorino into the egg mixture, followed by a coat of rice flour, ensuring it’s well-covered.

  6. Heat the Oil: In a frying pan, pour in enough seed oil to submerge the cheese slices. Heat the oil to around 170°C (338°F).

  7. Fry the Pecorino: Carefully fry the Pecorino slices in batches, making sure not to overcrowd the pan. Fry until golden and crispy, about 2-3 minutes per side. Once done, remove and drain excess oil on a paper towel.
