Crispy Fillo Cups with Ice Cream

Instructions:

To prepare these delightful crispy fillo cups with ice cream, begin by placing one sheet of fillo pastry flat in front of you. Carefully place the next sheet on top, aligning them to create a smaller rectangle. Fold this rectangle in half to form a square. Use a smooth-edged knife to trim the edges of the square and separate the six layers of pastry.

Repeat the same steps with the remaining three sheets of fillo pastry.

Next, pour sunflower oil into a saucepan, heating it to 170°C (340°F). Once the oil is hot, take a small metal mold, about 5 cm (2 inches) in diameter, and place it in the center of the pastry square. Gently lower the pastry with the mold into the hot oil, ensuring that the pastry crisps around the mold. Allow it to fry for about 2 minutes. After that, carefully turn the basket over using another spoon, and fry the other side for another 2 minutes until it’s golden brown and crispy.

Once the pastry has turned a uniform golden color, remove it from the oil and drain it upside down on a tray lined with paper towels. Repeat the same process to fry all the fillo baskets.

Once the baskets have cooled completely, carefully place them on a serving plate. Fill each one with a generous scoop of vanilla ice cream, and top with a drizzle of strawberry topping. Serve immediately and enjoy your crispy, creamy treat!

  • You can substitute vanilla ice cream with any other flavor of your choice.
  • For added sweetness, consider drizzling some honey or caramel sauce along with the strawberry topping.
