Apple and Speck Crostini (Spianatine con Mele e Speck)

La Bottega di Olivia & Marino (Italian crusty bread) 12 slices
Golden Apples (Mele Golden) 2
Speck (smoked cured ham) 4 slices
White Wine 50 ml
Cinnamon Sticks 2
Lemon Zest ½ lemon
Extra Virgin Olive Oil 1 tablespoon
Salt to taste
Water as needed

Instructions

  1. Prepare the Apple Compote:
    Start by preparing the sautéed apple compote. Peel the apples and remove the cores, then cut them into small cubes.

  2. Cook the Apples:
    Heat the tablespoon of extra virgin olive oil in a non-stick skillet over medium heat. Add the cubed apples, followed by the cinnamon sticks and lemon zest. Sauté the apples for a few seconds to soften.

  3. Deglaze with White Wine:
    Pour in the white wine and let it evaporate as the apples continue to cook. Once the wine has evaporated, season with a pinch of salt. Lower the heat and continue cooking the apples for about 10 minutes, until they are tender and softened.

  4. Blend the Apples:
    Once the apples are soft, transfer them to a blender or food processor. Blend until smooth, but leave a few small chunks for texture.

  5. Add Speck:
    Cut the speck into thin strips. Stir the speck into the blended apple compote, ensuring the flavors are well incorporated.
