Greek Farro Salad Recipe

Piccadilly Tomatoes 250g
Canned Tuna in Olive Oil 100g
Red Onion 1

Instructions:

  1. Cook the Farro: Begin by cooking the pearl farro. Place it in a pot of boiling salted water and cook until tender, following package instructions. Once cooked, drain the farro and rinse it quickly under cold running water to stop the cooking process. Transfer the farro to a bowl and drizzle with a little extra virgin olive oil. Stir gently and set aside to cool slightly.

  2. Prepare the Red Onion: Peel the red onion and slice it thinly. Place the slices in a bowl of ice water to make them crisp and mellow out the sharpness of their flavor. Let the onions soak for about 10-15 minutes.

  3. Prep the Capers and Olives: Rinse the salted capers under cold water to remove the excess salt. Finely chop the capers with a knife and set aside. Do the same with the Greek black olivesโ€”remove the pits if needed, and roughly chop them.

  4. Prepare the Tomatoes: Wash and dry the Piccadilly tomatoes. Cut them into quarters and set aside.

  5. Assemble the Salad: Once the farro has cooled slightly, add the prepared ingredients to the bowl with farro: chopped olives, capers, thinly sliced red onions (drained from the ice water), and the quartered tomatoes. Gently toss everything together.

  6. Add the Tuna and Flavorings: Open the can of tuna, drain the oil, and break the tuna into chunks. Add it to the salad. Season with a pinch of salt, a generous sprinkle of grated lemon zest, and a drizzle of extra virgin olive oil.

  7. Finishing Touches: Tear a few fresh basil leaves and scatter them over the salad. Toss everything one last time to ensure all the ingredients are well combined.
