Spirulina Pasta with Smoked Salmon and Veggies

Instructions
Prepare the Spirulina Pasta:
- Begin by making the fresh pasta: sift the all-purpose flour into a bowl and add the spirulina powder.
- Add the eggs to the flour mixture and knead it well until the ingredients are fully combined and form a dough.
- Dust your work surface with flour and continue working the dough until it is smooth and elastic.
- Shape the dough into a ball, wrap it in plastic wrap, and refrigerate it for at least 30 minutes to rest.
Prepare the Vegetable and Salmon Sauce:
- While the dough rests, slice the spring onion and peeled carrots into thin rounds.
- Heat a drizzle of extra virgin olive oil in a pan over medium heat and gently sauté the spring onion for a few minutes.
- Add the whole cherry tomatoes to the pan and lower the heat. Begin pressing down on the tomatoes as they soften.
- Add the zucchini and carrots to the pan, stirring them gently to mix with the tomatoes.
- Season with salt and black pepper. Add a small amount of water (about a shot glass worth) to help the sauce cook without drying out.
- Let the vegetable mixture simmer on low heat for about 20 minutes. If needed, add more water to prevent the sauce from drying out.
Cook the Pasta:
- Meanwhile, bring a pot of salted water to a boil for the pasta.
- Once the dough has rested, roll it out into a thin sheet and cut it into tagliatelle-like strips.
- Cook the pasta in the boiling salted water for about 2-3 minutes until al dente, then drain it directly into the pan with the vegetable sauce.
Combine Pasta and Sauce:
- Add the flaked smoked salmon to the vegetable sauce, mixing it gently into the vegetables and allowing the salmon to warm through.
- Toss the pasta in the pan with the sauce over a gentle flame. If needed, add a little bit of the pasta cooking water to help bring everything together and create a creamy texture.
Finish and Serve:
- Serve the pasta on plates, garnished with freshly ground black pepper, a drizzle of extra virgin olive oil, and a few leaves of fresh basil and mint for added freshness.
