Sauteed Broccoli Rabe Recipe (Cime di Rapa in Padella)

Instructions

  1. Prepare the Broccoli Rabe: Start by cleaning the broccoli rabe. Trim away the tougher stems and discard the outer leaves. After cleaning, you should have around 360g of broccoli rabe. Rinse it thoroughly under cold water to remove any dirt or residue.

  2. Boil the Broccoli Rabe: Bring a large pot of water to a boil. Once boiling, add the prepared broccoli rabe to the pot. Allow the broccoli rabe to cook for a few minutes until it wilts and becomes tender.

  3. Drain the Broccoli Rabe: Once the broccoli rabe is nicely wilted, drain it well, pressing out any excess water.

  4. Saute the Broccoli Rabe: In a pan, heat a generous amount of extra virgin olive oil. Add the garlic cloves and fresh chili pepper, sautéing them until the garlic becomes golden and aromatic.

  5. Combine and Season: Add the drained broccoli rabe to the pan. Stir well to coat the greens with the oil, garlic, and chili. Season with fine salt to taste. Continue sautéing for a few more minutes until the flavors have melded together.

  6. Serve: Once the broccoli rabe is tender and well-seasoned, remove the pan from the heat. Serve immediately, and enjoy this savory, flavorful side dish!
