Ingredients

Instructions

  1. Prepare the Yeast Mixture
    Begin by dissolving the fresh brewer’s yeast in warm whole milk. Add the sugar to the mixture and stir gently to help the yeast activate. Set the mixture aside for a few minutes.

  2. Mix the Dough
    Place both the Manitoba and all-purpose flours into the bowl of a stand mixer. Add the yeast mixture and start working the dough with the hook attachment. Gradually add the whole egg and continue mixing until the dough begins to form.

  3. Incorporate Butter
    Once the dough begins to come together, add the softened butter. Continue mixing until the butter is fully absorbed and the dough is smooth, elastic, and well-incorporated around the hook.

  4. Add the Egg Yolks and Salt
    To the dough, add the egg yolks, one at a time, allowing each to incorporate fully before adding the next. Sprinkle in the salt and mix again until smooth. The dough should be slightly sticky but workable.

  5. Let the Dough Rise
    Transfer the dough to a well-greased bowl, covering it with plastic wrap. Let it rise for approximately 1-2 hours, or until doubled in size. You can place the bowl in a warm spot to encourage faster rising.

  6. Roll and Shape the Dough
    After the dough has risen, gently punch it down to release the air. Turn the dough out onto a lightly floured surface and roll it out into a rectangle. Fold the dough in thirds (like a letter), then roll it out again. Repeat the folding and rolling process two more times. This will help create layers in the dough.

  7. Cut the Mini Krapfen
    Using a 5cm round cutter, cut the dough into small circles. You should be able to get approximately 20 mini Krapfen from this dough. Place them onto a lightly floured tray as you go, making sure they don’t touch each other.

  8. Second Rise
    Cover the tray with plastic wrap and allow the dough circles to rise for another 20 minutes. This will give them time to puff up before frying.

  9. Fry the Mini Krapfen
    Heat the sunflower oil in a deep pan or fryer to around 150°C (measured with a kitchen thermometer). Once the oil has reached the correct temperature, gently place 1-2 Krapfen at a time into the oil. Fry them, turning occasionally, until golden brown on both sides. This should take about 3-4 minutes per batch. You’ll notice a characteristic white strip forming in the center as they fry.

  10. Drain and Dust with Sugar
    Once fried, carefully remove the Krapfen from the oil and place them on a paper towel to drain any excess oil. While they’re still warm, roll them in a bowl of sugar to coat them lightly. You can also dust them with powdered sugar for a finishing touch.

  11. Serve and Enjoy
    These mini Krapfen are best served warm or at room temperature. They can be enjoyed plain, or you can get creative and fill them with jam, cream, or chocolate. Either way, they’re sure to be a hit at any occasion.
