Pandoro Tortini with Apples, Walnuts, and Nutella®

Ingredients

Nutella® 180g
Pandoro 3kg
Golden Delicious Apples 800g
Walnuts (shelled) 180g
Sugar 60g
Orange Juice 1
Butter 60g
Red Currants q.b. (to taste)
Mint q.b. (to taste)

Instructions

  1. To begin, melt the butter over low heat and set it aside to cool slightly.
  2. Wash and dry the apples. Cut them in half, remove the core, and slice them into small, even cubes, leaving the skin intact.
  3. Roughly chop the walnuts and set them aside.
  4. In a large bowl, combine the apple cubes with sugar and toss to coat.
  5. Sauté the apples in a pan over medium heat until they begin to soften and caramelize, about 5-7 minutes. Stir occasionally to ensure they cook evenly and develop a slight golden-brown color.
  6. Slice the Pandoro into thin slices, about half a centimeter thick.
  7. Using a round cookie cutter (approximately 7 cm in diameter), cut out 12 rounds from the Pandoro slices. You will need 6 rounds for the base of the tortini and 6 for the top.
  8. Preheat your oven to 200°C (400°F). Lightly grease a muffin tin with half of the melted butter.
  9. Place the 6 Pandoro discs in the muffin tin, pressing them firmly into the bottom and along the edges to form a base.
  10. Toast the Pandoro in the preheated oven for about 5 minutes, or until slightly golden.
  11. Remove the tin from the oven and fill each Pandoro base with a generous amount of the caramelized apple mixture.
  12. Brush the tops of the filled tortini with the remaining melted butter.
  13. Let the tortini cool slightly before carefully removing them from the muffin tin.
  14. To finish, spoon 15g of Nutella® onto the top of each tortino, using a small spoon to spread it evenly.
  15. Garnish with any remaining apple filling and a sprig of red currants for an extra touch of color and flavor. Optionally, add a fresh mint leaf for an aromatic finish.

Tips:

  • For a richer flavor, you can add a dash of cinnamon or a sprinkle of orange zest to the caramelized apples.
  • The combination of the soft Pandoro, warm apples, crunchy walnuts, and the smooth Nutella® creates a delightful contrast of textures and flavors. Perfect for a cozy dessert or holiday treat!
