Instructions

Prepare the savory shortcrust pastry:
In a food processor, combine the all-purpose flour with the cold butter (cut into pieces) and coarse salt. Close the lid and pulse until the mixture forms a crumbly texture. -
Transfer the mixture onto a work surface and knead lightly to form a dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least an hour.

Shape the pastry:
After the resting time, roll out the dough on a lightly floured surface to a thickness of about ½ cm. Use a round cutter to cut out four bases of 10 cm in diameter. Then, cut strips of dough about 3 cm wide to form the sides (borders) of the tartlets. -
Assemble the tartlets:
Place the 10 cm discs of dough on a baking sheet. Press the strips of dough around the edges to form the tartlet shells. Drizzle a bit of olive oil over the pastry and sprinkle with salt. -
Prepare the filling:
Cut the cherry tomatoes in half or leave them whole depending on your preference. Arrange the cherry tomatoes inside the pastry shells, filling them up. Add the Taggiasca olives on top of the tomatoes. -
Bake the tartlets:
Bake the tartlets in a preheated oven at 180°C (350°F) for about 20 minutes, or until the pastry is golden and crispy. -
Finish and serve:
Once baked, remove the tartlets from the oven and allow them to cool slightly. Carefully remove them from the pans and let them cool to room temperature for about 30 minutes. -
Final touches:
Before serving, spoon some fresh Robiola cheese onto each tartlet, add a few fresh oregano leaves, and drizzle with a little extra virgin olive oil.
