Scallops and Pears in Grana Padano Puff Pastry

Instructions

  1. Prepare the Pears:
    Begin by washing and halving the pear. Cut one half into 6 wedges and remove the core using a small knife.

  2. Grate the Grana Padano:
    Using a coarse grater, grate the Grana Padano DOP.

  3. Make the Grana Padano Puff Pastry:
    Heat a non-stick pan over medium heat. Once itโ€™s well-heated, place a spoonful of grated Grana Padano DOP in the center. Allow it to cook until the cheese forms a light crust at the base. Once the crust is formed, place a pear wedge in the center of each cheese round.

  4. Prepare the Scallops:
    Separate the coral from the scallop’s nut, then season with a pinch of salt and water. Sautรฉ the mixture over medium heat for a couple of minutes, making sure the liquid doesnโ€™t reduce too much.

  5. Blend the Mixture:
    Transfer the mixture into a tall, narrow glass and use an immersion blender to blend until it reaches a mayonnaise-like consistency. If necessary, add a little olive oil to achieve the desired texture.

  6. Sautรฉ the Scallops:
    In another pan, heat a drizzle of extra virgin olive oil and clarified butter. When hot, add the scallops, cooking them briefly on both sides until lightly browned.

  7. Prepare the Grapes:
    Cut the white grapes in half.

  8. Assemble the Dish:
    On each plate, place three scallops. Top them with the pear and Grana Padano crisp. Drizzle with the prepared sauce and garnish with red currants, grape halves, and a little extra black pepper to taste.

  9. Serve:
    Serve immediately, and enjoy the delicate balance of sweet pear, savory scallops, and the richness of Grana Padano cheese!
