Instructions:

To begin preparing this delicious Pear and Amaretti Cake, start by handling the amaretti cookies. Place them into a blender or food processor to crush them finely. Once crushed, set them aside.

In a separate large mixing bowl, combine the all-purpose flour, baking powder, and the crushed amaretti. Stir these dry ingredients together and set them aside as well.

Next, in another large bowl, crack the eggs and add the sugar. Using a hand mixer or whisk, beat the eggs and sugar together until the mixture becomes light, fluffy, and slightly thickened. While continuing to mix, slowly pour in the vegetable oil, a little at a time, to ensure the batter remains smooth and well emulsified.

Once the batter is smooth and light, peel the pears and slice them into small chunks. Gently fold the pear pieces into the cake batter, making sure the fruit is evenly distributed.

Now, gradually fold in the dry ingredients (flour, baking powder, and amaretti mixture) into the wet batter. Stir everything gently until fully combined, but avoid over-mixing to keep the cake light and fluffy.

Preheat your oven to 180°C (350°F), and line a cake pan with parchment paper or lightly grease it. Pour the batter into the prepared pan and spread it evenly.

Bake the cake in the preheated oven for about 45 minutes or until a toothpick inserted in the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for a few minutes. Then, transfer it onto a cooling rack to cool completely.
