Crispy Flakes with Caciocavallo and Truffle Cream
Category: Appetizers
Servings: 4

Ingredients:

Ingredient Quantity
Crispy Oven Baked Flakes 12
Black Truffle 15g
Caciocavallo Cheese 100g
Extra Virgin Olive Oil 5 tbsp
Garlic 1 clove
Anchovy Fillets (in oil) 2

Instructions:

  1. Prepare the Truffle Cream:
Begin by finely chopping the black truffle with a knife, setting aside a few small shavings for garnish later. Transfer the chopped truffle to a mortar. Add half a clove of garlic and the two anchovy fillets. Begin pounding these ingredients together in the mortar until they form a rough paste.

  2. Add Olive Oil:
Slowly incorporate the extra virgin olive oil into the truffle mixture. Continue pounding and mixing until you achieve a smooth, creamy texture, creating a fragrant truffle sauce.

  3. Prepare the Caciocavallo:
Cut the Caciocavallo cheese into small cubes and place them on a sheet of parchment paper. Arrange them in a single layer, then place the parchment paper under the grill in your oven preheated to 180°C (350°F). Let the cheese melt and lightly brown for just a few seconds, keeping an eye on it to prevent burning.

  4. Assemble the Appetizers:
Spread the prepared truffle cream generously onto each crispy oven-baked flake (such as “La Bottega di Olivia & Marino”). Place a warm, melted piece of Caciocavallo cheese on top of each flake.

  5. Finish and Garnish:
To complete, decorate each appetizer with a delicate shaving of black truffle for an elegant touch and a burst of truffle flavor.

Serve immediately, and delight your guests with this luxurious, savory treat that brings together the rich flavors of truffle, Caciocavallo, and anchovies on a crunchy base. Perfect for a refined appetizer to kick off any meal! Enjoy!
