Instructions
To prepare the delicious chocolate scones, start by placing the flour, sugar, baking powder, and the butter (cut into small pieces) into the bowl of a stand mixer fitted with a paddle attachment. Add in the cocoa powder and mix briefly. Gradually pour in the milk, ensuring the ingredients combine into a dough.
Next, transfer the dough into a bowl, cover with plastic wrap, and refrigerate for 15-20 minutes to allow it to rest and firm up.
After resting, take the dough out of the refrigerator and roll it out with a rolling pin to about 1 cm in thickness. Using a round cookie cutter (approximately 7 cm in diameter), cut out the scones, which should yield around 6 pieces. Arrange them on a baking sheet lined with parchment paper.
In a small bowl, whisk the egg with a tablespoon of milk. Brush the top of each scone with this egg wash to give them a lovely golden color when baked.
Preheat your oven to 200°C (for static) or 180°C (for convection). Bake the scones for 15 minutes in a static oven or 10 minutes in a convection oven, or until they are golden brown. Remove them from the oven and allow them to cool on a wire rack.
Once the scones have cooled slightly, carefully slice them in half.
For the filling, prepare the whipped cream by placing the heavy cream and powdered sugar into the bowl of a stand mixer (or use an electric hand mixer). Whisk the mixture until it forms stiff peaks. Transfer the whipped cream to a piping bag fitted with a star tip.
To assemble the scones, pipe a generous amount of whipped cream on the bottom half of each scone. Top with a spoonful of apple and orange jam, then gently press the top half of the scone onto the cream and jam to form a sandwich.
