Instructions

Step 1: Preparing the Duck Burgers
Start by removing the skin and visible fat from the duck breast. Once cleaned, cut the meat into thin strips. Using the diced duck, form four equal-sized burger patties. Place the patties in a baking dish, cover with plastic wrap, and refrigerate for at least 30 minutes to firm up.

Step 2: Caramelizing the Onions
While the duck patties chill, prepare the caramelized onions. Slice the red onions thinly and place them in a large pan with a drizzle of extra virgin olive oil. Add the brown sugar and water to the onions. Cook on low to medium heat, stirring occasionally, until the onions soften and turn a rich golden brown.

Step 3: Making the Citrus Mayonnaise
In a blender or food processor, combine the egg yolks, a pinch of salt, and black pepper. Squeeze the juice of a tangerine into the mix and add apple cider vinegar. Begin blending and slowly pour in the sunflower oil until the mixture emulsifies into a smooth mayonnaise. Finish by stirring in the grated zest of an orange for a citrusy zing.

Step 4: Preparing the Chips

Fry the potato slices in batches, ensuring they don’t overlap. Once golden and crisp, drain them on paper towels and season with a pinch of salt.

Step 5: Cooking the Duck Burgers
Take the duck patties out of the refrigerator. Lightly brush each patty with a bit of extra virgin olive oil. Heat a grill pan or grill over medium heat. Cook the patties for about 2 minutes on one side, then flip and cook for another 2 minutes, seasoning with salt and pepper. The interior should remain pink for a tender and juicy texture.

Step 6: Assembling the Burgers
Place the grilled duck patties on a baking tray and top each with slices of Gorgonzola cheese. Place the tray in the oven for a couple of minutes to melt the cheese. While the cheese melts, slice the tomatoes into thin rounds and prepare the mixed salad leaves.
