Hazelnut and Pine Nut Cousbareia Sauce

Pine nuts 60g
All-purpose flour (00) 2 tbsp
Fresh parsley 4 sprigs
Black pepper to taste
Fine salt to taste
White onions 380g
Extra virgin olive oil 55g
Water 300ml

Instructions:

  1. Prepare the onions: Begin by peeling and finely slicing the white onions into thin rounds.
  2. Chop the nuts: Coarsely chop the shelled hazelnuts and pine nuts.
  3. Sauté the onions: In a large skillet, heat the extra virgin olive oil over medium heat. Add the sliced onions and sauté them gently, stirring occasionally, until they soften and become translucent. This will take about 5–7 minutes.
  4. Add water and season: Once the onions have softened, gradually pour in the water, stirring the mixture to combine. Season with finely chopped fresh parsley, a pinch of salt, and freshly ground black pepper. Continue cooking for another 5 minutes, allowing the flavors to meld together.
  5. Thicken the sauce: To thicken and bind the sauce, sift in one to two tablespoons of all-purpose flour. Stir thoroughly to ensure no lumps form. Allow the sauce to simmer for an additional 5 minutes, ensuring it thickens to the desired consistency.
  6. Serve: Once thickened, your cousbareia sauce is ready to be served. This rich, nutty sauce pairs beautifully with meats, vegetables, or as a savory addition to pasta dishes.
