Risotto alla Milanese in Microwave Jar Cooking

Instructions:

Step 1: Preparing the Sauté Base
To begin, finely chop the onion and sauté it in a glass bowl with 30g of butter. Once the butter has melted and the onion becomes translucent, transfer the bowl into the microwave. Set the microwave to 750 watts and cook for 3 minutes, allowing the onions to soften.

Step 2: Cooking the Rice
Once the onions are ready, add the Vialone Nano rice to the bowl, stirring gently to coat the rice with the butter and onions. Pour in the white wine, allowing the liquid to absorb into the rice.

Step 3: Preparing for Jar Cooking
Now, divide the rice mixture, along with all the broth, into two 500ml glass jars. Carefully clean the edges of the jars to remove any spillage, ensuring a clean seal when closed.

Step 4: First Microwave Cooking
Place the jars in the microwave one by one. Set the microwave to 500 watts and cook the first jar for 6 minutes. After this, remove the jar from the microwave and let it rest, still sealed, for 20 minutes. During this resting time, the rice will continue to cook and absorb the liquid while the vacuum seal forms.

Step 5: Cooking the Second Jar
While the first jar is resting, repeat the cooking process with the second jar, following the same steps.

Step 6: Opening and Finishing
Once the resting period is over, carefully open the jar by microwaving it for about 3 minutes at 750 watts. This will help release the vacuum seal. As the steam builds up, the jar’s lid will gently pop open. Add the remaining 16g of butter to the rice and stir until it is fully incorporated.

Step 7: Serve
Your Risotto alla Milanese is now ready to serve. Enjoy this creamy, flavorful risotto while it’s still hot, topped with a generous sprinkling of Grana Padano DOP for extra flavor.
