Instructions:

Step 1: Prepare the Hake

Start by cleaning the hake (nasello) — remove the insides, rinse it thoroughly under cold running water, and cut off the fins. Discard the head and tail. Place the hake fillets in a plate and season them with lemon juice, half a teaspoon of oregano, a pinch of salt, and black pepper. Let the fish marinate for a while, turning the fillets gently to ensure they are coated well in the seasoning.

Step 2: Prepare the Vegetables

While the fish marinates, focus on prepping the vegetables. Peel the potatoes and cut them into even, bite-sized chunks. Chop the celery and the carrots into pieces. Peel and halve the onions. Once chopped, place all the vegetables into a bowl.

Step 3: Sauté the Vegetables

Heat half of the sparkling wine in a large pan and add the peeled garlic clove. Add the vegetables to the pan and stir well to mix.
