Instructions:

  1. Prepare the Chocolate Coating:
    Start by melting the dark chocolate. Break the chocolate into small pieces and place them in a heatproof bowl. Set the bowl over a pot of gently simmering water (ensure the water does not touch the bowl). Stir the chocolate occasionally until fully melted and smooth.

  2. Coat the Ice Cream Cones:
    Using a brush, carefully coat the inside of the ice cream cones with the melted chocolate. Make sure to cover the cone evenly, then set them aside to cool. Allow the chocolate to harden completely, creating a crisp, chocolaty shell.

  3. Prepare the Fruit Salad:
    While the chocolate is cooling, prepare the fruit salad. Wash, dry, and dice the pear, apple, and peach into small cubes. In a large mixing bowl, combine the diced fruit with the red currants, brown sugar, rum, and desiccated coconut. Gently mix everything together, ensuring the sugar dissolves and the flavors meld.

  4. Fill the Cones:
    Once the chocolate inside the cones has set, carefully spoon the prepared fruit salad into each cone, filling them generously.
