Instructions:
- Prepare the Montasio Cream: Start by removing the rind from the Montasio cheese and cutting it into small cubes.
- In a saucepan with a heavy bottom, melt the butter over medium heat. Once melted, add the flour and whisk well to combine. Continue whisking and slowly pour in the milk, stirring constantly to create a smooth, very runny béchamel sauce.
- Add the cubed Montasio cheese to the saucepan. Follow by adding the fresh cream, stirring continuously to melt the cheese and form a velvety smooth cream.
- Once the cheese is completely melted and the sauce is smooth and creamy, season with salt and pepper to taste. Keep the cream warm by placing it in small ceramic ramekins for serving.
- Assemble the Dish: Take each olive stick and wrap it with a slice of Prosciutto Crudo di Sauris, ensuring the prosciutto envelops the olive stick.
- Serve: Place the prosciutto-wrapped olive sticks on a platter and serve with the warm Montasio cream for dipping.
