No-Bake Crostatine with Yogurt Cream and Nutella®

Ingredients:

Multifloral honey 40g
Coconut oil 30g
Brown sugar 15g
Fresh liquid cream 150g
Greek yogurt 75g

Instructions:

  1. Prepare the Base:

    • Begin by placing the blanched almonds into a food processor and pulse until finely chopped.
    • Transfer the chopped almonds into a bowl, then add the brown sugar, coconut oil, and honey.
    • Stir everything together using a spatula until a uniform mixture forms.
  2. Shape the Bases:

    • Grease and line 4 tartlet pans (about 10 cm in diameter and 8 cm at the base) with parchment paper.
    • Evenly distribute the almond mixture into each tartlet pan, pressing down lightly with the back of a spoon or moist fingers to form a compact base.
  3. Prepare the Yogurt Cream:

    • In a separate bowl, whip the fresh cream until soft peaks form.
    • Gently fold the Greek yogurt into the whipped cream. Start by adding a little cream to soften the yogurt, then gradually incorporate the remaining cream using folding motions to keep the texture light and airy.
    • Cover the bowl with plastic wrap and refrigerate for 30 minutes to allow the cream to firm up.
  4. Assemble the Crostatine:

    • After chilling, remove the tartlet bases from the pans and place them on a serving dish.
    • Prepare the fruit by slicing the strawberries into wedges, cutting the kiwi into quarters, and slicing the peach into thin rounds.
  5. Fill the Tartlets:

    • Using a spoon, fill each tartlet with the yogurt cream, smoothing the top gently.
    • Drizzle approximately 15g of Nutella® on top of each tartlet for a rich, chocolatey finish.
  6. Garnish with Fresh Fruit:

    • Decorate the tops of the tartlets with slices of strawberries, kiwi, and peaches, along with a few blueberries for added color and flavor.
