Instructions

  1. Prepare the Herb-Infused Bread Crumbs:

    • Begin by finely chopping the fresh thyme, rosemary, and sage. Remove the seeds from the chili pepper, or if you prefer a milder version, simply slice it.
    • Heat a pan on medium heat and add 25g of extra virgin olive oil. Once hot, add the garlic clove and the sliced chili pepper. Let it infuse for about 1 minute, ensuring the garlic doesn’t burn.
    • Remove the garlic and chili, and increase the heat. Add the bread crumbs, stirring constantly to prevent them from burning. Season with a pinch of black pepper and sautรฉ until golden and crisp.
    • Set the bread crumbs aside.
  2. Cook the Pasta:

    • While preparing the bread crumbs, bring a pot of salted water to a boil. Once boiling, add the square spaghetti and cook according to package instructions, usually around 10 minutes. Drain and set aside when done.
  3. Prepare the Cod and Tomato Sauce:

    • In a separate saucepan, heat a splash of extra virgin olive oil and add a whole garlic clove for flavor. Once fragrant, add the cod fillets. If using frozen cod, place them directly in the pan and let them thaw and cook for a couple of minutes.
    • Deglaze the pan with 35g of white wine and let it cook off. Add the canned cherry tomatoes and lower the heat to a simmer. Stir in the salt to taste and cook for 10 minutes, stirring occasionally. The sauce should thicken slightly.
  4. Combine Pasta with Sauce:

    • When the sauce is ready, gently break the cod fillets into bite-sized chunks and stir into the tomato sauce. Allow the cod to finish cooking for 2-3 minutes.
    • In the meantime, check the pasta and once it’s done, drain the spaghetti and add it directly into the sauce. Toss gently to combine and ensure the pasta is well coated with the sauce.
  5. Serve:

    • Divide the pasta into serving plates. Sprinkle the herb-infused bread crumbs generously over the top of each serving for a flavorful crunch.
