To make this delicious and comforting Tagliatelle with Fava Beans and Stracciatella, begin by bringing a pot of salted water to a boil. While the water is heating up, focus on preparing the ingredients.

  1. Prep the Guanciale: Slice the guanciale into thin rounds, about 2mm thick. Stack the slices and cut them into thin strips.

  2. Prepare the Leeks: Clean the leek by trimming off the ends and removing the outer layer. Slice it in half lengthwise, and then cut it into fine strips.

  3. Prepare the Carrots: Peel and trim the carrots, then use a vegetable peeler to create thin ribbons. Stack the ribbons and cut them into fine strips.

  4. Fava Beans: If you’re using fresh fava beans, remove them from their pods and set them aside.

  5. Cook the Guanciale: In a large non-stick skillet, heat a splash of oil and add the guanciale. Allow it to render its fat and become crispy.
