Prepare the Avocado: Start by cutting the avocado in half, removing the pit, and scooping out the creamy flesh with a spoon. Place the flesh into a tall mixing glass or bowl.

Blend the Ingredients: Add the coconut milk, honey, lemon juice, and water into the bowl with the avocado. Using an immersion blender, blend everything until smooth and well-combined.

Fill the Popsicle Molds: Pour the smooth mixture into popsicle molds, making sure each mold is filled evenly.

Freeze: Place the molds in the freezer and allow the popsicles to freeze for at least 4 hours, or until completely solid.

Unmold the Popsicles: Once the popsicles are fully frozen, run warm water over the outside of the molds to help release them more easily.
