Instructions:

To make this fragrant peach and lavender jam, it’s important to start with clean, intact jars and new lids. Begin by sanitizing them as indicated in the box at the end of the recipe to ensure proper preservation.

  1. Prepare the Peaches: Start by peeling the peaches and cutting them into small pieces. Place them into a stainless steel pot.

  2. Add Sugar: Sprinkle the sugar over the peaches and stir with a wooden spoon to mix, ensuring the fruit is well-coated with sugar. This step will enhance the natural sweetness of the peaches and allow them to release their juices.

  3. Macerate the Fruit: Cover the pot with plastic wrap and let the peaches macerate in the fridge for about an hour. This process will allow the peaches to release their natural juices and start breaking down.

  4. Cook the Jam: After an hour, remove the pot from the fridge. You’ll notice that the peaches have released their juices. Place the pot on the stove over medium heat and bring the mixture to a boil, stirring occasionally. As the jam cooks, use a food thermometer to monitor the temperature.

  5. Monitor the Temperature: Continue cooking until the jam reaches a temperature of 108°C (226°F). This is the ideal temperature for setting the jam. The boiling process will thicken the mixture and infuse the flavors.

  6. Jar the Jam: Once the jam is ready, carefully pour it into your sanitized jars while it’s still hot. Leave about 1–2 cm of space from the top of the jar to allow for expansion as the jam cools.

  7. Seal the Jars: Secure the lids tightly onto the jars. Turn the jars upside down to create a vacuum seal. Let them cool completely at room temperature.

  8. Check for Seal: Before consuming, check that the jar lids have sealed properly. Press gently on the center of the lid; if it doesn’t make a “click-clack” sound, the seal has been properly formed. If the lid pops back, it indicates that the vacuum hasn’t been created, and you should refrigerate the jam and consume it soon.
