Instructions

Step 1: Prepare the Homemade Crackers
Begin by preparing the crackers. In a large mixing bowl, combine the spelt flour and fine salt. Add the butter and work it into the flour mixture, breaking it up with your fingers until it resembles coarse crumbs. Pour in the white wine and knead the mixture gently until you have a smooth dough.

On a lightly floured surface, roll the dough into a thin sheet, approximately 28×24 cm and about 4-5 mm thick. Using a fork or a specialized tool, prick the dough all over to prevent it from puffing up during baking.

Next, mix a few sprigs of fresh rosemary with coarse salt. Sprinkle this aromatic mixture over the dough, then lightly moisten the surface with a bit of water. Bake the crackers in a preheated static oven at 170Β°C (338Β°F) for 25 minutes or until golden brown. Once done, set them aside to cool.


Step 2: Toast the Walnuts
While the crackers bake, place the walnuts in a dry skillet over medium heat. Toast them for a few minutes, stirring occasionally, until lightly browned and fragrant. Remove from heat and set aside.


Step 3: Prepare the Gorgonzola Sauce
In a blender or using an immersion blender, combine the Gorgonzola cheese (cut into large pieces), fresh cream, fine salt, black pepper, and nutmeg. Blend until smooth. Gradually add the extra virgin olive oil in a steady stream to help emulsify the mixture, creating a creamy sauce. Set aside.


Step 4: Slice the Figs
Rinse the figs gently under cool water and pat them dry with a towel. Slice them lengthwise into thin rounds, ensuring that each piece retains its natural shape and texture.


Step 5: Assemble the Carpaccio
On a serving platter, arrange the fig slices in a single layer. Drizzle the creamy Gorgonzola sauce over the figs, allowing it to pool slightly around the edges.

Garnish with a scattering of toasted walnuts for added crunch and flavor. If desired, add a few fresh leaves of thyme or rosemary to enhance the herbal notes.


Step 6: Serve
Serve the Figs and Gorgonzola Carpaccio alongside your freshly baked crackers. The combination of rich cheese, sweet figs, crunchy walnuts, and aromatic crackers makes for an exquisite appetizer that is both light and flavorful.
