Instructions:
- Begin by preparing the spring onions: trim the roots and clean them thoroughly.
- Heat a drizzle of extra virgin olive oil in a pan over medium heat for a few seconds. Add the spring onions and sautรฉ for a couple of minutes.
- Add the acacia honey, salt, raspberry vinegar, and dried chili to the pan. Stir well to combine, allowing the onions to caramelize for about 5 minutes. Remove from heat and set aside.
- Slice the Asiago cheese thinly and set aside for easy layering.
- In the same pan, add another drizzle of olive oil and heat it to medium. Place 2 slices of gluten-free bread in the pan and toast both sides for about 2 minutes until golden and crispy.
- Once toasted, place a slice of Asiago cheese on each piece of bread. Let the cheese melt slightly.
- Now it’s time to assemble the sandwich: take one slice of bread with melted cheese and top it with half of the fresh arugula.
- Cover with the second slice of bread, also topped with Asiago cheese.
- Add the remaining arugula, canned tuna, and the caramelized spring onions from earlier.
- Top off with the final slice of toasted bread and press lightly.
- Cut the sandwich in half and serve immediately for the freshest taste.
