Camcrung Ayam Merah Khas Aceh: A Spicy Red Chicken Delight

Ingredients:

  • 1 whole red chicken
  • 1/2 grated coconut (kelapa gongseng)
  • Spice Paste:
    • 3 shallots
    • 4 cloves garlic
    • Black peppercorns or ground pepper, to taste
    • Fresh ginger
    • 10 red chilies
    • 2 tablespoons coriander seeds
    • 1-inch piece turmeric
    • 8 cloves cumin (both whole and ground)
    • 1 sliced shallot
    • 5 star anise

Instructions:

  1. Prepare the Chicken:

    • Clean the whole chicken and rub it with lime juice to tenderize and add a zesty flavor.
  2. Make the Spice Paste:
