Rosata di Altamura – Almond and Chocolate Cake

Instructions:

To make the Rosata di Altamura, begin by placing the almonds in a food processor along with 50g of sugar from the total amount. Pulse until the almonds break down into a fine, sandy consistency. This will create a smooth, almond base for your cake batter.

In a separate large bowl, separate the egg whites from the yolks. Place the egg whites into a large mixing bowl and begin beating them with electric beaters. Add a few drops of lemon juice to help stabilize the egg whites. Continue beating until they form stiff, glossy peaks, indicating they are ready.

Next, in another bowl, beat the egg yolks with the remaining sugar until the mixture becomes light, fluffy, and well combined. Add a splash of Strega liqueur to infuse the batter with a unique aromatic flavor.

Once the yolks are well beaten, gently fold the almond mixture into the egg yolk mixture. Then, carefully add the chocolate chips, mixing delicately to avoid deflating the batter. It is important to use gentle folding motions from the bottom up to keep the air in the mixture.

Preheat your oven to 350°F (175°C). Grease a 24 cm (approximately 9.5-inch) round cake pan with butter, ensuring it is fully coated. Pour the batter into the prepared pan, smoothing the top with a spatula.

Place the cake in the oven and bake for around 30-40 minutes, or until the center is firm to the touch and a toothpick inserted into the center comes out clean. Let the cake cool slightly before turning it out onto a wire rack to cool completely.
