Almond Puddings with Strawberry Jam

Ingredients:

Almond milk 500g
Blanched almonds 30g
Cornstarch (cornflour) 50g
Sugar 90g
Strawberry jam 60g
Lemon 1
Mixed berries To taste
Strawberries To taste

Instructions:

  1. Prepare the Almond Flour:

    • Start by placing the blanched almonds in a food processor or blender. Pulse until finely ground, resembling almond flour.
  2. Make the Almond Pudding:

    • In a medium-sized saucepan, combine the cornstarch and the almond flour you just made. Stir them together to ensure they are evenly mixed.
    • In a separate pot, gently heat the almond milk over medium heat until it is warm but not boiling.
    • Once the almond milk is heated, gradually pour it into the dry ingredients while stirring constantly to prevent lumps.
    • Turn the heat back on and cook the mixture, stirring continuously, until it begins to thicken into a creamy consistency. This should take a few minutes.
    • Once thickened, reduce the heat to low and cook for an additional minute to ensure the pudding is smooth and fully thickened.
  3. Set the Puddings:

    • Remove the pudding mixture from the heat and transfer it into individual pudding molds, preferably silicone molds. This recipe makes enough to fill four molds that are approximately 6 cm in diameter and 5 cm deep.
    • Cover each mold with plastic wrap and allow the puddings to cool to room temperature, then refrigerate for at least 2-3 hours, or until set.
  4. Prepare the Strawberry Jam Sauce:

    • While the puddings are chilling, prepare the strawberry sauce. Start by squeezing the juice of the lemon and set it aside.
    • In a small bowl, combine the strawberry jam and the lemon juice.
    • Using an immersion blender or a regular blender, blend the jam and lemon juice together until smooth and well combined.
  5. Assemble the Puddings:

    • Once the almond puddings are set and chilled, carefully remove them from the molds. Gently run a knife around the edges to loosen them if necessary.
    • Plate the puddings and drizzle them with the strawberry jam sauce.
    • Garnish with fresh mixed berries, sliced strawberries, and a few sprigs of mint for a refreshing touch.
  6. Serve & Enjoy:

    • Serve the almond puddings immediately or keep them refrigerated until ready to serve. Enjoy the creamy, nutty flavor paired with the bright sweetness of the strawberry sauce.
