Ingredients:

Instructions:

  1. Prepare the Almond Crunch:

    • In a small saucepan, add 40g of sugar and the peeled almonds. Place the mixture on a sheet of parchment paper or a Silpat mat and let it cool to room temperature.
  2. Cook the Water-Sugar Mixture:

    • In a saucepan, heat 25g of water. Meanwhile, beat the egg yolks with an electric mixer until they are completely crumbled and smooth.
  3. Whip the Cream:

    • In a separate bowl, whip the fresh cream until it forms soft peaks.
  4. Combine and Mix:

    • Once the almond crunch has cooled, finely chop the almonds. In a large bowl, combine the egg yolk mixture, whipped cream, and chopped almonds from the crunch. Blend everything together into a smooth mixture.
  5. Chill the Mixture:

    • Place the mixture into the fridge for 10 minutes to firm up.
  6. Fill the Molds:

    • After 10 minutes, take your molds and fill them with the almond mixture, ensuring the molds are filled to the top. Place the molds in the freezer for at least 2 hours, allowing the semifreddo to set.
