Curry leaves 1 sprig
Turmeric powder (Haldi) 1/2 teaspoon
Red Chilli powder 1 teaspoon
Asafoetida (Hing) 1/4 teaspoon
Green Chilli 1, slit
Salt To taste (Kala namak if fasting)
Oil 2 teaspoons
Coriander (Dhania) leaves As required for garnish

Instructions

  1. Heat Oil and Temper Spices:
    Begin by heating oil in a kadhai or wok over medium heat. Once the oil is hot, add the mustard seeds. Allow them to flutter before adding the cumin seeds. Let the cumin seeds sizzle for a few seconds before adding the asafoetida (hing). Mix briefly.

  2. Add Curry Leaves and Green Chilli:
    Add the curry leaves and fry them for about 2 minutes, releasing their aroma. Next, add the slit green chilli to the pan and stir.

  3. Cook the Vegetables:
    Add the cubed potatoes, carrots, and green peas to the pan. Stir well to combine the vegetables with the tempered spices. Add about 1 cup of water to the pan, cover with a lid, and simmer on low flame for 10-15 minutes, or until the potatoes and carrots are tender.

  4. Add Spices and Garnish:
    Once the vegetables are cooked, open the lid and sprinkle in the turmeric powder and red chilli powder. Stir to ensure the spices coat the vegetables evenly. Add salt to taste (use kala namak if preparing for fasting). Mix well.

  5. Garnish and Serve:
    Garnish the sabzi with freshly chopped coriander leaves to add a burst of color and freshness.

  6. Serving Suggestion:
