Add the curry leaves and fry them for about 2 minutes, releasing their aroma. Next, add the slit green chilli to the pan and stir. -
Cook the Vegetables:
Add the cubed potatoes, carrots, and green peas to the pan. Stir well to combine the vegetables with the tempered spices. Add about 1 cup of water to the pan, cover with a lid, and simmer on low flame for 10-15 minutes, or until the potatoes and carrots are tender. -
Add Spices and Garnish:
Once the vegetables are cooked, open the lid and sprinkle in the turmeric powder and red chilli powder. Stir to ensure the spices coat the vegetables evenly. Add salt to taste (use kala namak if preparing for fasting). Mix well. -
