Instructions:

  1. Cook the Potatoes:

    • Begin by pressure cooking the potatoes. Cut the potatoes into halves and place them in a pressure cooker. Add 1/4 cup of water and cook for about 4-5 whistles. Once the pressure releases naturally, allow the potatoes to cool. Peel the skin off and cut them into large cubes. Set them aside.
  2. Cook the Spinach:

    • Heat a teaspoon of oil in a pan over medium heat. Add cumin seeds, followed by thinly sliced onions, finely chopped ginger, garlic, and cinnamon stick. Sauté until the onions soften and turn golden brown.
    • Add the spinach leaves along with a pinch of salt. Sauté the spinach until it wilts and reduces in volume. Once the spinach has softened, increase the heat to high and cook further until all the moisture evaporates. Set the cooked spinach aside in a separate dish.
