    • Now, add the finely chopped onion, curry leaves, green chilies, and grated ginger to the pan. Sauté everything until the onions become soft and translucent.
  3. Cooking Potatoes:

    • Once the onions are soft, add the boiled potatoes (peeled and chopped) to the pan. Stir them well and cook for another 2 minutes to combine the flavors.
  4. Adding the Poha:

    • Add the prepared poha to the pan. Sprinkle a little water over the poha to help it soften, and mix everything together gently.
    • Reduce the heat to low, cover the pan, and let the poha cook for about 4 to 5 minutes. This will allow the poha to absorb all the flavors and soften.
  5. Finishing Touches:

    • After 5 minutes, turn off the heat. Add fresh lemon juice, steamed green peas, roasted peanuts, and chopped coriander to the poha. Mix everything gently, ensuring all the ingredients are well combined.
  6. Garnishing and Serving:

    • Garnish with fresh pomegranate seeds for a touch of color and sweetness.
