Ingredients:

Potatoes (boiled, peeled, chopped) 2
Green peas (steamed) 1/4 cup

Cumin seeds (Jeera) 1/2 tsp
Curry leaves (Kadhi Patta) 6, finely chopped
Onion (finely chopped) 1 large
Green chilies (chopped) 2
Ginger (grated) 1 tsp
Turmeric powder (Haldi) 1/2 tsp
Asafoetida (Hing) 1/4 tsp
Sugar 2 tsp
Lemon (juice) 1
Peanuts 1 tbsp
Oil 2 tbsp
Fresh coriander (finely chopped) 2 tbsp
Pomegranate seeds 3/4 cup, for garnish
Salt To taste

Alternative Ingredients:

  • Sweet corn (steamed) – 1/2 cup
  • Sprouted lentils (mung) – 1/2 cup

Instructions:

  1. Prepare the Poha:
    Begin by washing the poha (flattened rice) under cold water. Make sure to drain out any excess water. Once washed, place the poha in a bowl. Add salt, turmeric powder, sugar, and asafoetida to the poha, and mix well. Set it aside for now.

  2. Cooking the Poha:
    Heat oil in a pan or kadhai over medium heat. Once the oil is hot, add the mustard seeds (rai) and cumin seeds (jeera). Let them splutter for about 10 seconds.

  3. Sauté the Aromatics:
    Add the finely chopped onion, curry leaves, grated ginger, and chopped green chilies to the pan. Sauté everything until the onions become soft and translucent. This should take about 3-4 minutes.

  4. Add Potatoes:
    Now, add the boiled and chopped potatoes to the pan. Stir them well and cook for another 2 minutes, letting the flavors blend together.

  5. Mix the Poha:
    After 2 minutes, add the prepared poha mixture into the pan. Sprinkle a little water over it, cover the pan with a lid, and cook on low heat for about 4 to 5 minutes. This allows the poha to cook through and absorb all the flavors.

  6. Final Touches:
    Turn off the heat, and squeeze in the lemon juice. Add the steamed green peas, roasted peanuts, and freshly chopped coriander. Mix everything gently to combine. Allow it to rest for a minute to let the flavors meld.

  7. Garnish and Serve:
    Just before serving, sprinkle the pomegranate seeds over the poha for a burst of color and freshness. Serve hot for breakfast, ideally with a side of filter coffee and fresh fruit.
