Instructions:

  1. Prep the Ingredients:
    Start by washing the rice and moong dal thoroughly. Set them aside. Chop the amaranth leaves finely and slit the green chilies.

  2. Cooking the Khichdi:
    In a pressure cooker, combine the washed rice, yellow moong dal, finely chopped amaranth leaves, turmeric powder, green chilies, and salt. Add 5 cups of water to achieve the perfect consistency for the khichdi. Stir everything together.

  3. Pressure Cooking:
    Close the pressure cooker lid, place the weight on top, and cook on medium heat for 2 whistles. After the two whistles, reduce the heat to low and let it simmer for 3 to 4 minutes. Turn off the heat and allow the pressure to release naturally.

  4. Final Touches:
    Once the pressure has released, open the cooker and give the khichdi a good stir. Taste and adjust the salt if necessary. Transfer the cooked amaranth khichdi into a serving bowl.

  5. Prepare the Tadka (Seasoning):
    In a small pan, heat 1 tablespoon of ghee. Add the cumin seeds and cinnamon stick. Let them crackle for a few seconds, releasing their aroma.

  6. Serve:
    Pour the hot ghee tadka over the cooked khichdi. Stir gently to combine the flavors. Serve the Amaranth Leaves Khichdi hot with a side of Gujarati Kadhi or Tomato Onion Cucumber Raita for a wholesome, satisfying meal.
